New Recipe BookletThe Countryside Alliance’s Game-to-Eat campaign has teamed up with TV Chef Mark Hix to produce a booklet containing seasonal game cooking recipe ideas. 

The booklet contains a step by step guide showing how to produce dishes such as roast partridge with mushrooms and autumn greens or braised venison with carrots, all taken from Mark Hix’s new book – the appropriately named “Seasonal Food”.

Mark, a big fan of British seasonal produce, says in the booklet that “Game is the perfect example of seasonal food at its best. Although, rather like fish, game often scares the hell out of the general public, because we are sometimes just not quite sure what to do with it.”
 
Alexia Robinson of Game-to-Eat commented: “We have been producing an annual recipe booklet for several years now and they have become hugely popular; many butchers regard the annual Game-to-Eat recipe booklet and posters as essential point-of-sale material that help them increase sales of game year on year. We all know the health benefits of game, and that eating seasonally is the right choice for the environment, but it’s the great taste that is really behind game’s popularity right now. Hopefully Mark’s recipes will inspire many to try game and see what they have been missing.”
